Who doesn’t love sweet potatoes?  Culinary gravity inexorably pulls them toward brown sugar or molasses or something candied, even with bacon (candied bacon).  But don’t do it, at least not this time.  I never encountered a sweet potato during my year abroad in the Swiss canton of Fribourg, a stone’s throw from the town of Gruyères (town, plural: cheese, singular), but I can guarantee that that if there were ever a culinary match made in heaven it’s sweet potato and that most hazelnut and butter flavored of all cheeses, aged Gruyère.  Some cheeses should never be melted (sorry, brie en croute is ghastly) but Gruyère is just the opposite.  Quiche, the poster child of boring French food from the ’70’s, is redeemed by the addition of aged Gruyère.  Fondue without Gruyère is but a pale revenant of the real deal.  Gruyère is expensive (around $20/lb.) but the recipe only calls for a cup and half of the stuff, grated, about 3 ounces.  Unfortunately, I only found out about the Gruyère after the ingredients photograph had been taken.  Jody announced that she’d added Gruyère–I couldn’t even photograph it being stirred into the bowl.  I growled and stomped around.  I should have waited until I tasted the finished pie.  Gruyère and sweet potatoes rule.

Something Wicked This Way Comes – Fried Stuffed Olives

Two kinds of cooks entertain at home: those who want guests in their kitchen, and those who don’t.  Fried Stuffed Olives are definitely for the former.  Filled with pork, salami, mortadella and cheese, these little bits of indulgence are best while still warm.  Out of the pan and into the mouth, with only a minute or two in between.  That means people nearby, glass of wine in hand, paper towel at the ready.  Cook, drain, eat.  Fun all round.

Eggs Baked in Avocado is as easy and foolproof a brunch as you’re likely to find, unless your local patissière delivers bags of warm fresh-baked croissants.  If you happen to come into some warm croissants or decent bread to serve with the eggs and avocados, all the better.  Baked avocadoes are delicious, but it’s hardly surprising most people have never eaten one, not when a ripe avocado is so good with just a squeeze of lime and a bit of salt.  A baked avocado has a rich, deep flavor that loves complimentary fat, like an egg yolk or cream, or the acidic contrast of a salad.  As we were pulling the elements of this post together I suggested topping the eggs with a spoonful of crème fraîche and calling it a day.  Not Jody.  The rule in our house is, once you open an avocado, you eat it–or you make sure someone else does–that same day, so just setting aside the cup of avocado flesh leftover from making a bit of room for the eggs was completely unacceptable.  You’re the lucky beneficiaries – you get eggs baked in avocados, served with a spicy avocado salad and crème fraîche.

For once I’m going to disagree with my wife (really, this is a first).  Stuffed Cabbage with Farro, Mushrooms and Chicken Livers may not be quick, but it is easy.  One foot in front of the other, that’s it, then before you know it, you’re done.  Hey, if you were part of the road-happy hoards who made the Bicycle Spring Rolls this past summer then stuffing your own cabbage leaves will be a snap.  Crowds will acclaim you umami king–or queen,your choice–because of the amazing thing that happens when tomato and liver and dried mushrooms meet, especially in a beautiful package.  There’s an olfactory tug of war in your brain as it tries to discern whether what you’re tasting is sweet or savory.  It doesn’t matter.  Trust me on this, it tastes good.

Gratin typically brings to mind a rich and cheesy dish of root vegetables (pronounced by all American children to rhyme with “all rotten”).  Nutritional guilt over this fat fest drives food bloggers to frantic rearrangements of their refrigerator poetry magnets into epithets like “a holiday indulgence” and a “once in awhile treat.”  But in the Adams-Rivard kitchen we scoff at a such reservations.  We eat gratins when we feel like it, whether Santa Claus or the Easter Bunny is joining us for dinner or not. Thank God for bicycles.  Which offers me a segue into this week’s dish, Eggplant, Pepper and Tomato Gratin.  While pedaling through Provence a month ago we couldn’t help but notice how much lighter a Provencal gratin is than its Gerard Depardieu-like cousins to the north.  The cream had vanished, along with much of the cheese, both supplanted by olive oil, bread crumbs, and fistfuls of crushed herbs.  Olive oil, we were reminded, transforms the flesh of vegetables into something unctuous.  Caramelization is the gilding on the lily.

For your consideration: Kale Salad with Plums, Roquefort and Walnuts.  By now it’s hard to believe that there remains a kale stoned unturned.  A few days ago, idling at a traffic light, the bedraggled bumper sticker on the car ahead of me drew my eye. The sun had bleached out the yellow background and faded the text to WRAITH56, and the edges of the sticker had that scalloped, singed effect favored by moviemakers for pirate treasure maps, as though someone had tried to peel away the bumper sticker, gotten disgusted, then said the hell with it.  I had to squint.  EAT MORE KALE.  Good lord, I wondered with a frisson of culinary panic, is kale overexposed?  Not so long ago you could hardly cruise down to the Gap for new underwear or Pinkberry for whatever it is that people buy at Pinkberry without noticing the sea of EAT MORE KALEs around you, as though overnight everyone in town in had joined a spanking new megachurch, and somehow forgotten to tell you.  Have we been kaled to death?  Can STOP TALKING ABOUT KALE bumper stickers be far behind?

Not so fast. Are we over-kaled?  I think not.  Not all important things fit on a bumper sticker: Eat kale, if you’re not already.  It’s really f****** delicious.

Oh, the things we do, the torments we endure, so you don’t have to.  The week’s Fig, Plum and and Hazelnut Tart didn’t start out as the walk in the park below.  After helping everyone become a tart shell master last week we thought we’d put the technique to good use with a simple fig and mascarpone tart.  However, after half our figs disappeared the night before we were scheduled to blog, we had to rethink our plan.  Nearby Allandale Farm had no figs, but they did have plums.  Voilà fig and plum tart.

Ceci n’est pas une quiche.  It’s a Swiss Chard Tart with Gruyère and Anchovies.  Quiche sounds so seventies, like the ubiquitous anonymous “white wine” that came into vogue as an alternative to cocktails during the same Swiss Chard Tart-6674culinary epoch.  Boring.  White.  Food.  But a tart, a tart can play.  Sweet or savory, rich or light, it has no rules beyond the obligatory crust, and inclination to use whatever looks good in the market that day.  And what looked good to us was the Swiss chard. So, yes, this is a savory custard tart, but it’s really about the chard. Oh, and the anchovies. The tart doesn’t taste like anchovies–it tastes like chard, with cream and cheese, and something salty and elusively delicious in the background.

Bike. Cook. Eat. Sleep. Provence.

Every year Jody participates in a cooking-cycling tour.  People like traveling with what Jody jokingly refers to as a “GCC,” that is, a “genuine celebrity chef.”  Over the course of 5 – 7 days people bike, visit local restaurants, vineyards and artisan producers of local products, and help prepare a multi-course meal based on the local cuisine with lots of instruction and guidance from Jody.  Accommodations are typically cushy.  The biking ability of participants ranges from novice to expert and everybody has a great time.  People abandon any inclination to count calories (and why would you?) after they experience a day of pedaling about the countryside.  Most people return to the US with at least one new discovery–a technique or taste sensation.  The top contenders on this trip were peeled tomatoes and rabbit.   My own favorite was rouget, small red fish from the Mediterranean, undoubtedly delicious in lots of ways, but I can personally vouch for them sautéed in butter with a little lemon and parsley.  Runner up was smoked cod roe, which I’d never even heard of before this trip–creamy, rich, unbelievably good when spread on a fresh baguette.
